Lemon & Herb Marinated Chicken Breast

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 lemon (zested and juiced)
  • 3 cloves garlic (minced)
  • 1 tablespoon fresh thyme (chopped)
  • 1 tablespoon fresh rosemary (chopped)
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • Salt and pepper to taste

Instructions:

1.     Prepare the Marinade: In a bowl, whisk together the olive oil, lemon zest, lemon juice, garlic, thyme, rosemary, Dijon mustard, honey, salt, and pepper.

2.     Marinate the Chicken: Place the chicken breasts in a large resealable plastic bag or shallow dish and pour the marinade over them. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.

3.     Cook the Chicken: Heat a grill pan or skillet over medium-high heat. Remove the chicken breasts from the marinade (discard the marinade) and cook for 5-7 minutes on each side, until the internal temperature reaches 75°C (165°F) and the chicken is golden and juicy.

4.     Serve: Let the chicken rest for a few minutes before slicing. Serve with your favorite sides!

Serve with a medley of roasted vegetables like carrots, bell peppers, zucchini, and red onions. The sweetness of the roasted vegetables complements the fresh, zesty chicken.
