Pure Beef Sausage with Caramelised Onion & Mustard Mash

Ingredients

·         4–6 pure beef sausages

·         2 large onions, thinly sliced

·         1 tbsp brown sugar

·         1 tbsp balsamic vinegar

·         2 tbsp butter

·         4 large potatoes, peeled and chopped

·         2 tbsp wholegrain or Dijon mustard

·         ½ cup milk or cream

·         Salt and pepper to taste

·         Oil for cooking

Method

1.     Cook the sausages in a pan over medium heat until browned and cooked through. Set aside to rest.

2.     In the same pan, add a little oil and cook the onions slowly until soft (about 10 minutes).

3.     Stir in brown sugar and balsamic vinegar. Cook for another 5–10 minutes until sticky and golden. Set aside.

4.     While the onions are cooking, boil the potatoes in salted water until soft. Drain and mash with butter, milk or cream, and mustard. Season to taste.

5.     Serve sausages on top of the mash, spoon over the caramelised onions, and enjoy.
